“This is a really good rendition of this extra-tart, austere style of Champagne. Citrus and steel are the prime components-don’t look for tropical fruits, toast or buttered nuts in this baby. This is a terroir-driven wine; it tastes like the chalk it’s grown in. Can you say oysters and caviar? How about triple crème cheeses, foie gras, etc? Made for the richest food you care to throw at it. ”

“Bright straw. Racy, citrussy aromas are bright and clean, emphasizing lime and lemon zest. Crisp, focused and pure, with vibrant green apple and lime flavors and a dusty, tangy mineral quality. Finishes with an expansive persistent flavor. This boasts impressive clarity and energy.”

“A naked wine, sans dosage, Ultra Brut gives a clear and unobstructed view of the chalk of Champagne. It’s dry, if not severe, ready for a plateau de fruits de mer, particularly the oysters and bulots.”
